When I was little, I would dream about my future home life. I had visions of turning music on in the evenings, entering my kitchen, playfully dancing and joking with my husband while I cooked and he waited to savor my creations, like Diane Keaton and Steve Martin in Father of the Bride 2.
For the first few years of my adult life, that scene didn’t exactly play out in reality the way it had in my childhood daydreams, save for a few occasions. Whether it was for budgetary reasons, time restrictions, or anything else, we would often find ourselves making something super simple and fast, or just picking something up on the way home.
We’ve since made our meals less humdrum, and we always connect in the kitchen, which I think is a kitchen’s main purpose in life! We’d like to invite you into our kitchen and beyond as we share our eats, drinks, and lives in Aggieland! Here, you’ll find a balance of savory, (mostly) healthy meals, some occasional treats, a glimpse into our awesome town, home of the Fightin’ Texas Aggies, and more.
While going through Target today (which is finally going to be a Super Target!! Aggieland’s all growned up!), I came across these cute candy covered Easter egg pretzels and just knew I had to put them on a cupcake for my first post!
Using the Homemade Funfetti Cupcakes recipe from Sally’s Baking Addiction as my base, I set about making these cute little things. The easter egg pretzels add just the right amount of crunch and salt necessary to balance the creamy sweetness of the buttercream frosting. That frosting. It could not be any easier or more delicious!! Just the right amount of heft so it isn’t greasy to the touch, and it just collapses in your mouth the way cupcake frosting should. Is your mouth watering yet? You don’t have to wait until Easter to make these, you should have the ingredients right in your pantry.
