I have a love/hate relationship with bananas. I’ll buy a few for green monster smoothies for the week, and then only use one or two. I try not to buy too many because of this, but sometimes my best intentions just end up becoming brown and unappetizing on the counter.
When this sad situation presents itself, you immediately think banana bread! And I think lame. I do enjoy a classic banana bread, sure, but sometimes I feel that it highlights the sweet but almost musky essence of nearly spoiled fruit. I know this sounds kind of disgusting, but stick with me.
I had some of these little stinkers crowding my counter (and cramping my style) Sunday afternoon and I wanted to try something different with them. Plus, it was Oscar Sunday, which definitely called for a unique dessert to pair with a glass of bubbly! I even think Ellen might have ordered a few batches of these to go with the pizza she served to the Oscar crowd. How cute was she? I love her style of delivery. It’s quirky, but relateable. Much like this cake!
I have seen brown butter in so many different kinds of recipes lately and thought a brown butter icing would pair wonderfully with a banana cake! I found this recipe which read like the beginning of Matthew. “Abraham begat Isaac; and Isaac begat Jacob”. Basically, this recipe made it through a few blog circuits! Everyone seemed to rave about the delicate, yet decadent frosting over the moist cake. So I spent the roughly 25 minutes to make them. What a payoff! This makes enough for a crowd of 5000. Maybe not really, but you’ll have plenty to share!
